Brussel Sprouts and Carrots: The Side Dish You Won’t Regret

Brussels and Carrots! This would make a great side dish or meal!
  • 3 cups fresh brussel sprouts; halved
  • 3 cups fresh carrots; sliced
  • Vegetable broth or very little unprocessed oil (about 2 Tbsp)
  • Everything but the Bagel Sesame Seasoning
The How To’s:
  • Preheat oven to 450F
  • Cut brussel sprouts in half and slice carrots if you haven’t already
  • Add brussel sprouts and carrots to a mixing bowl
  • Coat and toss veggies in either vegetable broth or oil
  • Cover cookie sheet with parchment paper and lay vegetables out evenly
  • Cover vegetables with seasoning and toss to coat evenly
  • Roast for 15 minutes then turn and cook for another 10 minutes or until veggies are done and slightly brown
  • Serve in a pretty bowl and enjoy!
Get ready cause you’re about to get hooked!!
Halve your brussel sprouts and slice the carrots already!
That’s better! Now coat your veggies in either broth or oil and toss to coat evenly!
Lay the veggies out on a cookie sheet with parchment paper and coat with seasoning!
Roast for 15 minutes, turn the cookie sheet around, and cook for another 10 minutes or until done and slightly brown!
Put in a pretty bowl to serve and ENJOY!

Tastier Taco Tuesday:

Because who doesn’t like tacos? Healthier tacos are even better!
  • 2 cups cooked black beans. Canned or preferably fresh!
  • 1/2 sliced (minced) red onion
  • 1 fresh, pitted avocado
  • Lime juice to taste
  • Hummus of your choice (I prefer homemade or Sabra Red Bell Pepper. Let me know if you want my homemade hummus recipe!!)
  • 1 bunch of freshly chopped cilantro to taste
  • 1 jalapeno, sliced (canned works too if youre not in the mood!)
  • Fresh cilantro salsa (mine is fresh. We reuse to save packaging)
  • 2 cups cooked brown rice (I use Success Boil-in-Bag if you’re like me and brown rice is just weird to cook)
  • Shredded green of your choice! I used Iceberg lettuce because we had it!
  • 2 cups fresh or 1 bag of frozen corn
  • 1 can or 2 cups homemade refried beans (I have a homemade recipe for this one too if y’all want it!)
  • Whole Grain Tortillas
Better look at the ingredients!
The How To’s:
  • Preheat oven to 450F for tortillas
  • Mash avocado, cilantro, and lime juice with a fork or potato masher
  • If you haven’t already, cook brown rice
  • Reheat black beans and refried beans
  • Put sliced jalapeno, extra cilantro, and minced onion in bowl for serving
  • Rinse fresh or frozen corn and add to bowl if serving
  • Heat tortillas for 5 minutes flipping halfway through (I heat the tortillas until they are nice and crunchy and fold them into a taco shape right out of the oven)
  • Layer ingredients and enjoy!!!

If you haven’t already, cook your brown rice! Fluff with fork
If serving guests, add sliced jalapeno, minced red onion, and extra chopped cilantro to a bowl, like this! I was serving Jeff so…
Place tortillas in oven (flipping halfway) until desired crunchiness (about 5 mins for me!)
If you’re like me, and enjoy serving every meal, then add corn, reheated black beans, refried beans, make it look cute, and ENJOY!!

Day Two: The Lazy Gal’s Avocado Toast

  • 2 Avocados pitted and sliced
  • 1 Roma tomato sliced
  • 1/2 lime, juiced (about a tablespoon or whatever you like!)
  • 100% whole grain bread
  • Trader Joe’s Everything but the Bagel Sesame Seasoning Blend
The How To’s
  • Preheat oven to 400F
  • Slice avocados, tomato, and juice lime
  • Once the oven is preheated; toast bread until desired crunchiness (toasters will do too if you’re feeling extra lazy! No shame!)
  • Mash avocados with a fork or potato masher
  • Add tomato, lime juice, and seasoning blend to avocados
  • Mix well and add to toast! Enjoy!
Avocados, Roma tomato, lime juice, and bread are your basics
I love this stuff! If you don’t have a Trader Joe’s they have it on Amazon! Would it even be avocado toast without it?
Once everything is sliced….
Juice half of the lime or more if you want! Add seasoning. Take out morning grumpies on avocados until it looks like…
THIS! Or your version of this!
Add to toast and VOILA! Now go get em!

Day One: Beginner’s Burrito Bowl:


  • 1 cup of overnight soaked dried black beans (preferred) or 1 can of black beans
  • 1 cup cooked brown rice
  • 1 jalapeno sliced
  • 1-2 roma tomatoes sliced
  • 2 cups fresh or frozen corn
  • 1 handful of romaine lettuce (or preferred crunchy green)
  • 1 avocado
  • 3 green onions thinly sliced
  • 2 spoonfuls fresh cilantro salsa
  • Cook soaked beans and brown rice
  • Rinse and prepare fresh vegetables
  • Rinse frozen corn if needed
Start to layer romaine, brown rice, and black beans
Layer some more with corn, tomatoes, and fresh cilantro salsa. Make it pretty with some avocado!
Make it even more delish looking with some green onions and sliced jalapenos
Blend with pretty tablescape so Jeff doesn’t realize the meat is missing
