New Year’s Day Not So Traditional Recipes!

Best of Luck Black Eyed Peas

I don’t know about y’all but in the South black-eyed peas are a staple! Especially on New Year’s Day! Since I changed to a WFPB lifestyle, this year I had to come up with a different way of making one of my favorite side dishes. Boy am I glad I did because these have such a wonderful, organic flavor that adding bacon never gave them. I will make them like this from now on!

Best of Luck Black Eyed Peas

  1. 1 1/2 Boxes of Vegetable Broth (low or no sodium)
  2. 1/2 Fresh onion (minced)
  3. 1 Fresh jalapeno (minced)
  4. 1/2 Tbsp of minced garlic
  5. 1 Bag fresh black eyed peas (not in the can)
  6. 1 Frozen bag of green beans
  7. 1/2 Tbsp Black Pepper and Turmeric
  8. 1 tsp Celery Seed
  9. Stock pot
Allow bag of fresh black-eyed peas soak in water overnight according to the directions on the bag.
Add vegetable broth to the stock pot and turn onto medium high heat until boiling.
Chop or mince (your preference) the jalapeno and onion while the stock pot heats up!
Once the broth is boiling turn the heat down to low and add the black-eyed peas and rinsed green beans.
It should look a little something like this! Then add the garlic, onion, jalapeno, and spices.
Then BAM! It will look like this! Let it cook on low, covered for about an hour or until the peas are to your liking! Uncovered they will need to cook for a few hours*
Don’t forget to stir every now and then so they will cook evenly!
Serve in pretty dish and best of luck y’all!
