Day Two: Avocado Toast

No, you didn’t read that wrong, breakfast is not my favorite. It’s the most important meal of the day, but it’s also the hardest meal of the day. In fact, full disclosure, until this challenge I rarely ate breakfast. If I did, it was a quick smoothie (most likely from a smoothie place in town). Even as a child, I would’ve taken 15 extra minutes of sleep over breakfast any day! Haha! If you don’t wake up like the Grinch that Stole Christmas (and I don’t mean the cool, fun Jim Carey kind) consider yourself very lucky!

As for an update on this new lifestyle, it’s the second day…but minus the candy, junk food, and Cokes I do feel lighter and more energized! I still miss cheese and Sprite though! Let’s be real, transitioning is hard, but also SO worth it so far! So my first ‘official breakfast’ on the whole foods plant based lifestyle will be my quick and easy avocado toast! I feel like everyone has their own recipe for this little breakfast life saver! I think this recipe is so yummy!
