Those Are Spicy Collard Greens!
- 1 Fresh bunch of collard greens
- 1 Fresh lemon
- 1 Jalapeno (fresh or in a jar will work)
- 1/2 Tbsp minced garlic
- 1 Tbsp Bragg’s Liquid Amino Acids (this is to replace salt and can be found on Amazon if your local grocery store doesn’t have it)
- 2 32 oz Low sodium vegetable broth
- I used a local (Already Dunn) spicy flavor enhancing sauce (you can use hot sauce if you don’t have this)
- 1 Tbsp Black Pepper
- 1 tsp Sesame Seeds
- Stock Pot

I don’t know about y’all but in the South black-eyed peas are a staple! Especially on New Year’s Day! Since I changed to a WFPB lifestyle, this year I had to come up with a different way of making one of my favorite side dishes. Boy am I glad I did because these have such a wonderful, organic flavor that adding bacon never gave them. I will make them like this from now on!
Best of Luck Black Eyed Peas
- 1 1/2 Boxes of Vegetable Broth (low or no sodium)
- 1/2 Fresh onion (minced)
- 1 Fresh jalapeno (minced)
- 1/2 Tbsp of minced garlic

- 1 Frozen bag of green beans
- 1/2 Tbsp Black Pepper and Turmeric
- 1 tsp Celery Seed

Welcome to a New Decade!
Hey Y’all!! Welcome to 2020! Can y’all believe we’ve entered into a new decade? I remember when we were all freaked out about Y2K and that feels like yesterday! This year my goals are simply self love and self care. That includes actually working out (something I’m terrible at), meditation, seeing my girlfriends more, bettering my relationship if that’s possible, reading more (something else I’m terrible at), and lots of other things!
What are y’all planning for the New Year? Whatever it is, just remember not to be too hard on yourself! Speaking of goals, one of Jeff’s is to try and hop on the Whole Food Plant Based train with me! What a great boyfriend, right? So today, like all my wonderful Instagram followers voted on and asked for, I’m going to be adding two new posts under the Whole Food Plant Based Journey tab! Brussel sprouts and carrots! Not a side dish/meal I thought I would’ve ever even eaten, much less enjoyed! Brussel sprouts just look gross to me to be honest!! Then my sister, Stephanie, had to go and make them taste good! Haha! She got my man addicted to them and that’s how this dish came about! I was trying to figure out how to cook these to get Jeff more into my new lifestyle, and I ended up making a dish I enjoyed too! The seasoning and roasting the veggies mix so well together and give it a salty and garlic type flavor with just a hint of sweetness from the carrots! So good! I’m not going to lie, blogging about this experience has made it SO much easier to transition than before because I feel a responsibility to stick to it! So THANK Y’ALL!!! I’m learning all about different kinds of teas, veggies, fruits, and I honestly don’t miss the meat! Even Jeff is trying to embrace this new lifestyle! I feel more energized, I don’t hate myself every single time I’m finished eating, and I’m able to find options at restaurants a lot more easily than expected!
My Mom is an angel, so she got me a bunch of books on plant based eating! So sweet! Jeff and I have been trying and creating new recipes for y’all so be sure to stay updated under the Whole Food Plant Based Journey tab for new recipes! Like last night’s Tastier Taco Tuesday! So yum if I do say so myself!
The other night Jeff and I watched the new documentary on Netflix called, The Game Changers…Oh my gosh…SO GOOD!! If you’re trying to talk your significant other into trying this new lifestyle watch THIS ONE! Inspirational! Have y’all seen it?
The best part of this lifestyle, for me, is looking forward to cooking a meal and knowing I’m going to feel better, help the enviornment, animals, and still WANT to cook!! So far I’m hooked!!
No, you didn’t read that wrong, breakfast is not my favorite. It’s the most important meal of the day, but it’s also the hardest meal of the day. In fact, full disclosure, until this challenge I rarely ate breakfast. If I did, it was a quick smoothie (most likely from a smoothie place in town). Even as a child, I would’ve taken 15 extra minutes of sleep over breakfast any day! Haha! If you don’t wake up like the Grinch that Stole Christmas (and I don’t mean the cool, fun Jim Carey kind) consider yourself very lucky!
As for an update on this new lifestyle, it’s the second day…but minus the candy, junk food, and Cokes I do feel lighter and more energized! I still miss cheese and Sprite though! Let’s be real, transitioning is hard, but also SO worth it so far! So my first ‘official breakfast’ on the whole foods plant based lifestyle will be my quick and easy avocado toast! I feel like everyone has their own recipe for this little breakfast life saver! I think this recipe is so yummy! If you follow me on Instagram then you know that I’ve been “trying” to embrace becoming 100% whole food plant based for a while. This is hands down one of the hardest things I’ve ever done. Some people can give up meat, dairy, eggs, honey, etc. very easily. I am not one of those people. When I first started this journey for my Epilepsy, I just KNEW that meat was going to be the hardest thing to give up, but it turns out it was the easiest for me. The hardest thing for me was cheese. Oh my gosh does my family love some cheese!! After spending many days researching the whole food plant based lifestyle (and lots of documentaries) I realized that Google is not your friend when it comes to finding out the exact definition of a whole food plant based lifestyle, no one really is (or I am a terrible researcher). All of them are different by just a little bit. So, on this journey, Day 1: My definition of what I’m following for a whole food plant based lifestyle includes this: Fruits, vegetables, nuts and seeds, legumes, whole grains, spices and herbs, natural juices, smoothies, lightly processed oils, and to avoid fast food, candy, Cokes (Sprite, DP, any kind), overly processed food (when possible), etc. So I’m going to need y’all’s help on this journey which is why I have decided to share it with y’all! So if something I’m eating or shouldn’t be eating isn’t according to the lifestyle then let me know so I can fix it!! Hey Y’all! Welcome to Life’s In Bloom!
I’m Nicole! I thought for my first post, I’d explain why I chose to create Life’s In Bloom. I have a disease called Epilepsy, a seizure disorder, and medication and all that fun stuff just doesn’t work for me. I’m so lucky, right? I am the type of person who chooses to deal with my disease with laughter, because, well frankly life is more fun that way! Anyway, so I was binge watching Netflix documentaries and I came across one about a vegan/plant based diet. I couldn’t believe what was happening to those poor animals! What really sucked me in though, was how many sick people had been able to reduce or even stop their medications once they started this lifestyle! Um….count me in! I had to give it a try! So I decided to create Life’s In Bloom so any and every one could go on this adventure with me (or at least laugh at, what I feel, is going to be the hardest thing I’ve ever done)! I realize that some people couldn’t care less about becoming vegan, so we’re also going to talk about things like fashion, makeup, and any other things y’all like!
