No, you didn’t read that wrong, breakfast is not my favorite. It’s the most important meal of the day, but it’s also the hardest meal of the day. In fact, full disclosure, until this challenge I rarely ate breakfast. If I did, it was a quick smoothie (most likely from a smoothie place in town). Even as a child, I would’ve taken 15 extra minutes of sleep over breakfast any day! Haha! If you don’t wake up like the Grinch that Stole Christmas (and I don’t mean the cool, fun Jim Carey kind) consider yourself very lucky!
As for an update on this new lifestyle, it’s the second day…but minus the candy, junk food, and Cokes I do feel lighter and more energized! I still miss cheese and Sprite though! Let’s be real, transitioning is hard, but also SO worth it so far! So my first ‘official breakfast’ on the whole foods plant based lifestyle will be my quick and easy avocado toast! I feel like everyone has their own recipe for this little breakfast life saver! I think this recipe is so yummy! If you follow me on Instagram then you know that I’ve been “trying” to embrace becoming 100% whole food plant based for a while. This is hands down one of the hardest things I’ve ever done. Some people can give up meat, dairy, eggs, honey, etc. very easily. I am not one of those people. When I first started this journey for my Epilepsy, I just KNEW that meat was going to be the hardest thing to give up, but it turns out it was the easiest for me. The hardest thing for me was cheese. Oh my gosh does my family love some cheese!! After spending many days researching the whole food plant based lifestyle (and lots of documentaries) I realized that Google is not your friend when it comes to finding out the exact definition of a whole food plant based lifestyle, no one really is (or I am a terrible researcher). All of them are different by just a little bit. So, on this journey, Day 1: My definition of what I’m following for a whole food plant based lifestyle includes this: Fruits, vegetables, nuts and seeds, legumes, whole grains, spices and herbs, natural juices, smoothies, lightly processed oils, and to avoid fast food, candy, Cokes (Sprite, DP, any kind), overly processed food (when possible), etc. So I’m going to need y’all’s help on this journey which is why I have decided to share it with y’all! So if something I’m eating or shouldn’t be eating isn’t according to the lifestyle then let me know so I can fix it!!
